This recipe will forever change the way you roast a chicken. Our vinaigrette dressing has certianly become a kitchen favourite. We have introduced the idea of using it to marinade a whole chicken.
SERVES 4-6 | PREP TIME: 5 MIN | COOK TIME: 1 HOUR
Ingredients
1 x whole free range chicken
1 x bottle Toast Vinaigrette
½ cup Olive
2 x whole garlic cloves, halved
1 x lemon, halved
Oil Salt and pepper to taste
Instructions
- Place the chicken in an oven dish.
- Season with salt and pepper and pour the vinaigrette and olive oil over the chicken.
- Cover and marinade over night.
- Add the lemons and garlic and roast in a preheated oven at 200°C for 1 hour.
- Turn twice in cooking time.

An extremely versatile dressing. Use as a marinade for mushrooms, grilled vegetables and as a basting for chicken or fish. Don’t waste excess dressing, mop it up with soft ciabatta.
