This one’s for the seafood lovers. You won’t believe how easy it is. It’s absolutely delicious, perfect for those weeknight dinner parties when you have very little time to prepare. Serve with hot toasted sourdough.
SERVES 4-6 | PREP TIME: 15 MIN | COOK TIME: 10-20 MIN
Ingredients
1.5 kg fresh clean mussels
2x tbsp Olive Oil
250ml cream
2x tsp salt
2x onions, finely chopped
840g Toast Tomato Pasta Sauce
¼ cup parsley, finely chopped
1x loaf bread, sliced & toasted
Instructions
- Heat the oil in a large pot.
- Cook the onions until soft and caramelised.
- Add the mussels. Add the cream and tomato sauce.
- Replace lid and stir once or twice. Once all the mussels are open the dish is ready.
- Discard any mussels that won’t open.
- Garnish with parsley and serve with hot toasted sourdough.
